Lactase, also known as β-galactosidase, is a food-grade enzyme. It is derived from Aspergillus oryzae and produced via submerged fermentation. Its primary application is in dietary supplements, where it acts as a digestive aid to alleviate lactose intolerance.

Action Principle
Lactase hydrolyzes the β-glycosidic bond in lactose molecules, breaking them down into glucose and galactose.
